Yes, the silicone forms work quite nicely, & yes, you could use your pie dough 4 rolls, but they need 2 proof much longer & will be quite dense…taste great tho…

That said, my Sam’s has a great 12" sub roll, both wheat & white, for about $.20 & a decent french bread - defrost overnite, floor proof for a few hours & bake in your conveyor oven, at a reduced temp & increased time…

If I were to cut them, roll them and then let them proof on our flour table for a while, would that be enough for them to proof? Not a experienced baker as you can tell…

not really - the yeast level is quite low when compared to traditional rolls…it will take many hours to rise…stick w/Sam’s

10 oz dough ball baked on lloyds hearth bake disc 3.5 min @ 500 deg. We hand stretch and form like a sub and we make a smaller round roll. Customers have told us it is the best bread they have ever had.
