10.4% on a 16" Cheese

Right around 9%. Historically it has been a much higher %. ( 12% to 15% )

Im at 11.5%
And cheese is at good prices, must be doing something wrong

For our base cheeses (mozzerella and vegan cheese) we average about 7.5%. We charge a premium for vegan cheese, so that brings our percentage down a little.
