What time do you open and how early do you go in?

I have two openers go in at 10 with a third person on call and we open at 11

I go in from 430-9, 6 nights a week. And normally take Tuesday off

A former employer, doing minimally $4k or so a day, has a first prep person in no later than 730, others start staggering (literally and figuratively) after that, first kitchen by 830, first front at 930. Boss shows up around 930, in and out in the afternoon, but is around through the dinner rush.
