White bread dough recipe for pepperoni rolls

looking to make either a 25 or 50 lb batch of white bread dough for pepperoni rolls? does anyone have a recipe or know where I could find one

I purchases a book from Peter Reinhart (not sure I spelled his name correctly) called Perfect Pan Dough. He is a bread guru, and has recipes for bread doughs developed by artisan bread makers. I now have an awesome pan dough and have just started to test, making hogie buns with it.
