Just 1. Thats 87 14" pizzas an hour at 5 minutes. I considerd 2 40's, but I don't have a heat rack, and most of my crew could not reach the top of 2 ovens.

If your going to be doing this for another 5 to 10 years, I think you should by new and take care of it.
I have a specialty pizza I stole from December:). Its called the honey boy, a little extra pepperoni, then after you cut it, apply the Mikes hot honey around the crust of the pizza and then all over the pizza somewhat lightly.

I am considering getting a warming cabinet. my concern is does it change the pizza. for instance, if you have pizza in a hot bag for more than 15 minutes they get soggy. or if the temp of the cabinet is to high it will continue cooking the pizza.
currently I just have a bunch of sheet pan grates...
