    Experimentation

Okay, here’s one I like to make around this time of year. We live on the Oregon coast, so I get some fresh dungeness crab, saute it in butter, and use it with our garlic-ranch sauce, onion & mozz/monterey jack. Yum, Yum! I think I’ll try that garlic mashed potato pizza next. tom R

Please critique my new door hanger coupons!!!

Joker, Are you planning on sending out menus with them? Also, if you haven’t gotten magnets out yet, maybe this would be a good time to package them with the door hangers. The 1st year we were open I did just that, and it worked well. What the guys are saying about focus and quantity is good...

    Opinion Poll regarding my posts

Nick, Take it from someone who does get accused of talking too much, you’re cool in my book! You and Daddio always have something worth reading. Keep up the good work. Now, why can’t I find that poll on the Gregster? Tom R

    When's Your Busy Season?

That’s funny you mention getting tired of our own food. We went to a BBQ-rib joint the other day, and my wife realized she had her work shirt on. The owners there had a good laugh, they said their kid’s bedroom is full of our pizza boxes! I think one thing that gives us a boost in the summer is...

    When's Your Busy Season?

Hey all! I notice that most everyone here talks about wintertime being your busiest season. I don’t know if it’s the demographics, but for us, summer is our busiest time. We’re about five miles inland from the central Oregon Coast. The coast brings in a lot of tourism, mainly summertime. But our...

Baking subs & calzones in a deck oven

We do the same as marbles. If the bottom cooks too fast though, you might try the Air-Bake pans from costco. They’re just a flat two layered cookie sheet, but we found they work wonders for subs, calzones and cinnamon-twists. Tom R

Any of you opening on Thanksgiving?

We don’t open either. Actually, the Wed. before we usually get a bump in sales, so being closed on Thanksgiving doesn’t hurt the bottom line much. Tom R

    Is this a moderated forum?

I’m sorry to hear that. It’s a sobering thought that someone who has so much knowledge in the industry can end up in that spot where we fear most. He really took time to help out with anyone’s questions. I’m confident that whatever direction he decided to go, he’ll be back on top soon. Tom R

    Crust Savers vs Ripple Boards

Hey all. I’ve been using Crust savers, formerly known as Dri-pie for a couple years. Great product, but expensive. I pay about 22 cents delivered for the 12 inch. When I started using them, my supplier at the time didn’t carry ripple boards. I can now get the ripple boards through my supplier at...

Stupid delivery driver got in small wreck and wants new car

Re: Stupid delivery driver got in small wreck and wants new All Due respect, it isn’t your driver’s responsibility to provide the insurance for delivering pizza on YOUR time. It is yours. I can see that your philosiphy is that if something does happen, your employees are to lie to their...

    Do Crust Savers Work?

We use the Crust savers, and the same bags that Daddio suggested. Though they are expensive, the crust savers really make a difference with our pies. I havent tried the cardboard things, but maybe they would work, and cost less. If you call the folks at Crust Saver, they’ll send you some...
