Air frying wings as only fryer source

Hello all, I am thinking about opening a pizzeria but the landlord said that he doesn’t want any fryers. Any other equipment would be fine. I am in Buffalo, NY, the home of the chicken wing and I don’t think I could get away with not serving them at all.

I was wondering if anyone has any experience air frying wings in a commercial kitchen? I was researching commercial air fryers but they would be out of my budget so I was thinking of using multiple individual small air fryers.

What are the pro’s and con’s? Is this a terrible idea?

Do you already have a lease? If not find a other landlord. Growing up there, i think you’d get killed by you customers. You could likely do ok with baking in the oven. BUT, as you know, in Buffalo, pizza and wings are considered one word

you can’t serve wings in western new york that haven’t been properly prepared

Using small air fryers instead of traditional fryers to make wings could work, especially if your landlord doesn’t allow fryers in your pizzeria.
