Tom,
was wanting to try Take N Bake i was wondering if i will need to adjust my recipe i currently making dough that
last about 48-72 hrs

It looks like you have a pretty good dough to start with. I would give it a try just as it is without any changes to the formula. The only thing I would suggest is that you make the T&B pizzas from the dough on the first day of use rather than on the second or third day. This wil give the dough a little more built in protection to consumer inflicted abuse.
