Baked Pasta

we use small aluminum pans (like those used by Chinese restaurants)…
the pasta is cooked/chilled…
the sauce is warm…
put a small dolop of sauce in the pan, then the pasta and other goodies…
I’ve not had to reheat goodies, such as grilled chicken or meatballs…
cover w/additional sauce & mozz & run thru the oven…

a big mover is “Almost Lasagne” - ricotta blend, meatballs & sauce…

Chicken Parm or Alfredo is also popular

Our easiest and most popular baked pasta is Baked mostaccioli (or penne).

7" round foil pan. 8 oz of cold noodles, top with 2 oz mozzarella, then 6 oz of cold pasta sauce, then 3 more oz of mozzarella. Run through oven until cheese on top is a nice color. For meat sauce, raw beef can be added before pasta sauce, and it will be cooked when the pasta is done. Mushrooms and green peppers also make a good addition. I get $7 for the baked pasta, plus another $1 for meat sauce, meat balls, or veggies.

We also do chicken parm, canneloni and lasagna, but they are much more difficult, as we make them fresh.
