Bought My First DELCO Today

you stated - From Reading THE THINK TANK I feel there is a community here to help me and encourage me as I move forward on my new adventure.

however you choose to dismiss the advice given off hand

you stated - labor and utilities 20%

AND utilities! - people on here are telling you that labour can’t run at 20% never mind with utilities as well - what does this shop cook with - meal bean gas?

you stated - As far as advice go’s There is alot of helpful feedback from great people in the business, and i am thankful for that.
but advice to quit before ever getting started, thats just unacceptable to me.

BUT NO ONE has said quit - they’ve told you to be careful and pointed out issues which are obvious to people who’ve been in the business - which you choose to ignore.

AND the - So since there are alot of people thinkin I’ll fall on my face. I got another 10K says Ill make it a year, any body want a part of it…

so which is it - you’ve got 10k to bet! me think not!

You tell us you had an idea about the increase in food cost yet got forced to stop the printer at the last minute - what a joke.

There’s a couple of ‘looking to buy’ on this board every week or two but in the 3 or 4 years I’ve been posting this has got to be the most ridiculous!

Yes I had an idea that food cost will be going up, I even Have an idea that in a few months it is possibe that there will be a flour shortage that could mean there will be no flour at any price. Seems a bit drastic but it is possible. If I were a farmer What would I be planting. with the development of e85 flex fuel
the price of corn woul be like me planting a oil field on my property. would I grow wheat if I could make 5x the $$$ growing corn.
Labor and utilities are currently 20%. The current owner has dropped advertising and is running on a skelaton that is Starving. I expect and Know that this figure will increase As i will be increasing the advertising from 0.00 to at least 500.00 per week. the balance here (IMO) is to grow staff and sales together so there is no customers pissed off for lack of service and I am not out 500.00 for labor I can not afford. so yes I will be filling in the gaps answering phone, making pizza, and delivering, myself, with 2 other employees until I can Hire others to meet the deman. as well as making my best effort to generate a higher demand to justify the increased labor cost. Granted it would be great to have an extra 20k to hire employees to stand arround and watch tv untill the calls come in. it would also be nice to have 50 orders paitently waiting untill we could get them there order in the next couple of hours.
I proceeded with the current pricing because at that moment that pricing was current. The last thing I wanted to do was walk in and change prices on the first day of business, But thats the way the ball bounced and I met the demand at 11:00 pm on the night before the fliers went to press. So do you think anyone could say way to go, Good Job, or are yo saying hey you should have known in January that you would have to raise prices on your first day in may. I was dealing blackjack in vegas in January, Had no Idea I would be A Pizza Store Owner On May 1… Give Me a break, Theres alot to absorbe in a short period of time and I am Doing my best with What I Have to Do It With…

OBTW I like a challenge, Thats My business. I do what I want when I want. I decided in 2006 i wanted to be a dealer in las vegas
I took 10K moved to vegas went to school 3 Months later, wala I was a blackjack and craps dealer working at the Sahara Casino. Great Money Great Job Had fun doing it. So Now I want to own a pizza Joint, In March I started investigating and Said I am Giong to take 10K and Do It… The 10K is not the last of my life. it is my limit because I made it my limit. Seemed like a challenge I could live with. Paid cash for my cars, Paid off 50%of 200k mortgage in 1 year dealing cards and playing craps in vegas… Gambling is my niche, Hard work is fun. When May 1 2009 Rolls arround I will say look what I done with 10k

We are (At least I am) saying that anyone who expected to buy a pizzeria today should have done the due diligence to find out if flour/cheese/labor pricing increases were accounted for in the existing menu and product pricing circulated to the public . . . and very certainly any new print assets being developed and invested in. Your clue did not exist because you did not get any projections past whatever day back then as to what the most volatile commodity was doing in your purchasing contract . . . and you went to press with bogus information. You do not price for today and live long to tell about it . . . you anticipate as best you can the highest price the market will stand (and hope it covers expenses, and your anticipated increases). It is not a crime, and we’ve all goofed up . . . the difference is that several have said you needed more research and information before jumping in the pool. You are now swimming with the rest of us, though. It gets cold and deep sometimes for every one of us.

This is a key example of the sort of knowledge and experience that will cost large dollars in the short term, over and over. I am sorry to be blunt about this one: If you don’t get past the short term, then your long term vision be d@mned. We who were urging patience and caution were speaking about your extensive lack of any foodservice experience walking into a blind venture. You will be absolutely dead in the water the day your dough doesn’t proof overnight, and you have no skins to open for the shift.

Your heart and enthusiasm are in the right place and duly respected by many here. If that were enough to succeed in the pizza business, there would not be so many used pizza ovens and collapsing pizza businesses for sale in this country. You may well beat the odds . . . and the 1st step is admitting you have to beat the odds. I wake up each day knowing I haven’t beaten them yet after 4 years. It keeps me honest and hungry.

Several did . . . you basically called them ‘haters’ and said your marketing and group building would carry you through. It may yet, but they didn’t see the flour contract expiration train coming down the menu pricing tracks.

Hey pizza boom I have been reading the thread and really didn’t want to say much until now.

Are you here because you want us to pat you on the head and say good job? I post on this board usually hoping someone ruffles my feathers and gives me a new perspective and challenges my current. I have owned my first location for 14 years and our second for just over a year. If I had to do it again I would have HEARD what these posters are saying. We are all in business still…you are buying and trusting an owner who is going OUT of business. Instead of getting angry and frustrated by the posters I suggest you digest the information. Instead of balking at the flour issue (which you should have known about) you should be asking what else we might have some insight to…but instead you want us to agree and build your ego.

Flour is a staple of our business…the flour/cheese/oil/gas issues have been going on several months now clearly a little research would have enlightened you.

It is just like the labor issue…20% on labor and utilities…mark my words this is insanely inaccurate. Do you even know how you are going to track this stuff when you open? What about food cost how are you going to track it. Ordering the menus is easy…have you taken his menu and the prices you are going to pay for food and broke them down into ACTUAL food cost?

You don’t just assume or pick a price out of the air or a competitor’s menu you will actually need to see what it is.

I am thrilled for you for following your dream of owning a place. 10k is not that much…you are going to go through it quickly.

Good luck to ya and try and change your perception of all of us…we are giving you all the info from our own “fools tax” and you are so caught up in being right you are missing some very very valuable info.

Your CAN DO attitude is cool, IMO but you will find this adventure will be much different than anything you could have ever imagined. It is a fun and busy business with very much to stay on top of. I was green and never stopped learning. The warnings and flags put before you here by seasoned professionals are key. This is NOT a corporate setting but bringing a corporate mind to the table will help form a professional and well run shop. However, that mindset doesn’t get the meatballs made, the sausages cooked,the dough proofed, the salads prepped, the coldcuts sliced, the flank cut, the order placed as needed, the meals tax paid, the payroll cut and deposits made…etc, etc, etc.

My offer of advice to you is - this board is a wealth of information and experience. Attitude will only take away such an important tool.

In response your inquiry as to a higher quality, gourmet product in an area that calls for it, of course, go for it. You need to clearly understand your cost and prices accordingly. People go where they can get fantastic food and will pay for it in areas such as yours.

You - ask for advice about buying a run down shop with obviously little real idea about what you’re really getting into then bite the hands that give you advice - then without any knowledge start telling me I haven’t done or aren’t willing to do something!

Me - 2 shops - 58 employees - 5 years in business

Me? pi$$ed off - why on earth would I be pi$$ed off with how you want to waste your time and money?

something tells me this is that driver starting to get everyone riled up this guy ask for our opinions and then shoots them down well i say goodluck but i hope you plan on being there 100+ hrs a week because that is the only way it might work and also if you have this kind of attitude with us don’t expect your 2 employees to stick around because i wouldn’t work for a narrow minded gungho guy like you

Closed out month 1 Gross $42,193.00 Up from pre-purchase sales in april/2008 of $10.507.00 of coarse my first month goal was to just to hit the previos month after hearing all the negatives from the naysayers on this web site… Guess a positive attitude and a little hard work goes along way, this was not easy by no means. but for all the jerks that posted such nice comments all i will say is go F%^&$ yourselves and quit taking yourselves so G(D D^$N seriously. Tried to post the pictures of my New Heritage Softail that I paid cash for to reward myself for the hard work but seems no pictures get on here. I am not looking for any addaboys from any of yall either. seems your so stuck in your own world of make sh&%t Hard that youll probly not even notice this post.

Congrats if the sales were as described. PizzaBoom, Pictures, website, something to show us that the place is in order to convince the naysayers . . . just using outrage and derogatory language doesn’t give a lot of credence. If you want to prove something to us . . . then prove it. If you are unhappy with the assembled minds and opinions here and active currently, then please have a nice day and successful business somewhere else.

“I told you so” can always be appropriate when the collected wisdom is wrong . . . but methinks thou dost protest too much.

It makes me think back to when we first opened…man those sales were awesome…keeping them is a whole different ball game. Not sure if you marketed for a grand re opening or anything but beware as the “wisdom” here would tell you there is a honey moon stage the first month.

Let us know how you are doing a couple of months from now…if you can find the time to post.
