Help with pricing out pizza in Hawaii

Aloha Everyone,
I want to figure out what a pizza is going to cost me to make in Hawaii.
Specifically, for a large pepperoni pizza (16")?

I am going to call some restaurant supply places on Monday and need to know what to ask for?
What typically would I need to order from these guys?
Flour … what size bag, 100#?
Pepperoni …What size is typical?
Cheese (montzerella) … What size is typical?
Sauce
Yeast… What is a typical order size?

I’m not worried at this time about salt, sugar, oil, etc. Just the biggies. We can add .20-.30 cents for the little stuff. Any help is appreciated. I have never called a restaurant supply before and don’t wanna sound like an idiot. :oops:

After I get the numbers I am hoping we can plug them in and get a guestimate of what the pizza will cost to make.

High glutton flour is normally purchased in 50 lb. bags although some people use 25 lb. bags. Sliced pepperoni will typically come in a 10 or 25 lb. box. Mozzarella cheese (part skim or whole milk) will normally be packed 6 x 5 lb. bags of shredded or 8 x 6 lb. blocks. A 20 lb. box of yeast may last 2 months for me, so I don’t really consider it significant. The other food products to look closely at would be sauce, boxes, sausage, and wings if you plan to sell them.

HI is no doubt a different market then most States. Your delivered costs for ingredients will be much higher than most-- obviously you will need to price your product accordingly. I could help you determine you final pricing once you research your raw ingredients.

I can give a little help with finding the right sources for some of those items, if you would like. Who are you contacting? HFM, Suisian, Hansen, Y Hata are the big ones to check out here in the islands. HFM (Hawaii Flour Mills) has 50# high gluten flour that we use, and depending on your potential usage, it can range anywhere from $20 per bag, up to $27 or so… Mozzarella prices for us are surprisingly reasonable compared to what I have seen others on this board say they are paying - same for meats.

Where are you located? Another consideration for which vendor you use is delivery schedule, depending on where you are. Some companies have warehouses on multiple islands, some have to have everything barged in…

Using a premade dough and the standard weights that I use on my 14" pizza, a 14" pepperoni pizza will cost you $4.27 including the box. To have a 30% food cost on this pizza you would need to charge $14.23. This cost could be reduced by making you own dough. Again using my formula for dough you would reduce this cost by 81 cents. At a cost of $3.46 to have 30% food costs you would need to sell at $11.53.
