Keeping Pizzas Warm

How do yall keep pizzas warm on a Friday Night? We have heat lamps in our cutting window but ever since covid we have more carryout than dine in. We run out of space and we have no room on top of our ovens.
 
We’ve added the 24x60” SS Metro heated shelves for our online pickup area and also to a kitchen to counter pass thru area for all other order types.
 
I am considering getting a warming cabinet. my concern is does it change the pizza. for instance, if you have pizza in a hot bag for more than 15 minutes they get soggy. or if the temp of the cabinet is to high it will continue cooking the pizza.
currently I just have a bunch of sheet pan grates on top of my edge 3260, and that works fine, I think. but I try to time making the pizzas timed to when I think the drivers will gets back. I would love to just make the pizzas when they come in and relax, but I dont want to lose quality.
Do you guys think you lose much quailty with a warming cabinet?
how long could you leave it in there?
At what temp?

The pizza doesn't get soggy since it is dry air circulating. I try to get pizzas out the door asap, but have not had problems. Most pizzas are in the cabinet for about 10 minutes or less. I keep it at 160.
