Oven problems

We have 2x Lincoln II ovens and just last week we have had trouble with both of them over heating but not simultaneously (the heat light stays on but the temp. goes down for about 2 - 5 mins. then it comes back up to the required temp.)Also we are in the midddle of winter here in Australia, so that doesn’t come into the equation { Temp. 15 degrees celsius}.Does anyone out there know how to fix this problem. We have had the technicians out already.

make sure you have pleny of gas pressure going to the ovens. I have seen this cause a sporadic heating problem in the past with triple stack of middlebys.

The gas pressure might be it. We had the same problem with Blodgetts and Lincolns. Everything was fine until the water heater kicked in, and sucked up gas, then the ovens got cold (lincolns) or beeped for a bit(Blodgetts). The problem was intermittant enough that it was completely frustrating, as you usually don’t make that connection right away.
