Pepper Salad for sandwiches

I visited a very busy and successful Italian Deli recently as in four registers and wall to wall people for lunch. they had a pepper salad that was used for sandwiches by request. It looked like to me this pepper salad was going out on a majority of the sandwiches I saw (mostly ham, salami type sandwiches.) It was made with shredded lettuce, black pepper, probably oil & vinegar, maybe green bell peppers, etc. Has anybody seen anything like this? Any ideas for recipes? It was really terrific on the sandwich I purchased…and unique.

thank you! I looked at a number of these types of sites. Somehow I missed this recipe. I found another one on the same site. going to experiment with them. Thanks again for your help.
