Shredded Cheese Vs. Diced...which is more economical?

no one has addressed this point yet so Ill ask - many pizza shops grate their own cheeses from bulk - isn’t their a cheese dicer available to the shop operator?
 
Many use their Hobart mixers to shred their cheese with an attachment that will give you various lengths of shred…

A vertical cutter mixer is able to chop, or almost produce a diced product…

A dedicated device to shred cheese is several thousands of dollars, but it will produce a diced product.

When cheese is either shredded or diced, it is mixed with an anti-caking product…
