Because of your venue, why not put up a sign/banner, saying something to the extent of “Have one of our great tasting take and bake pizzas for lunch. Be sure to pick one up on your way out of the market”. You could pre-open some of the dough skins and put them onto the ovenable pans and hold in a reach in cooler, then all you would need to do is to apply cheese and toppings and wrap. For the ovenable pans/trays, go to Pactiv at [email protected] (Terry Mabus) or M-Press Packaging at <mpresspac.com>. Be sure to apply a very light film of oil to either of these trays before you put the dough onto them as they will tend to stick if the consumer holds the unbaked pizza for more than a day in their refrigerator.
