The French Knife still works fine for me too, but lately, it seems we all gotta have the latest and greatest slice and dice omatic to do the simplest of slicing and dicing chores. I do agree though that some shops have such a high volume that they could almost go with commercial (large scale) slicing and dicing equipment. For many small shops though, the knife still reigns supreme as the slicing and dicing implement.
