What is your Prime Cost?

28 food (goal 25) 36 labor (goal under 35). 64% prime. 4% higher than my current goal, but every 6 months we have decreased our prime cost since taking over almost 3 years ago. All a work in progress.

Labor DOES include all management whereas some put that elsewhere.

My owner pay comes in the form of a % of sales. I view myself as corporate and pay myself that way.

Good stuff! Contribution to the bottom line of the pizzas that are best sellers or make up the majority of sales would need to be considered. Someone have an algorithm to share .
