Take and Bake Pizza

Because of your venue, why not put up a sign/banner, saying something to the extent of “Have one of our great tasting take and bake pizzas for lunch. Be sure to pick one up on your way out of the market”. You could pre-open some of the dough skins and put them onto the ovenable pans and hold in a reach in cooler, then all you would need to do is to apply cheese and toppings and wrap. For the ovenable pans/trays, go to Pactiv at tmabus@pactiv.com (Terry Mabus) or M-Press Packaging at <mpresspac.com>. Be sure to apply a very light film of oil to either of these trays before you put the dough onto them as they will tend to stick if the consumer holds the unbaked pizza for more than a day in their refrigerator.

Your ideas are great about the sign and your methods to pre-open the skins and have them available to dress.

Thanks you for telling me where the places are to buy the oven pans/trays. Also for telling me to add oil to the pan so it won’t stick for the customers.
