What's everyone paying for wings?

Went to Rd last weekend to get miscut wings…Sold out. The website said they were in stock, got the feeling the meat dept guy just didnt feel like getting a pallet down from the back to get me a few cases

I offer #1 frozen fully cooked at $2.19 Lb. 9-11 ct for a 10 lb. case.
What brand do you use? How are you getting a fully cooked product for $2.19/#? You must be running through tons of these to get that great of a price!!!

Ive only bought one case, but they were 44lb case.
I didnt like them much. Most of them were really mangled or lollipoped

Id guess 8-9 per pound

Anyone use Koch pre cooked wings? We just had some wings that weren’t completely cooked, came out pink even after we fried them. Spoke with Koch about it and they are sending a rep out this week because they have never had an issue like this before. See attached. Got it, so do you usually buy the jumbo from RD or do you get them from somewhere else and use RD as a backup?

I buy jumbo party wings from my main supplier.
I go to Restaurant Depot randomly, I saw miscut wings and decided to try them.
Restaurant Depot is the only place I saw that carries them

Also this week I purchased a 40lb case of fresh wings, they were described as flats and wing tips only. At $39 a case, I was intrigued.

Ok thanks. I have a full kitchen in my new spot so I’m wanting to master Chicken Wings ahead of time so I can hit the ground running and not waste too much time with R&D. My last two spots only had space for an oven so I was baking pre-cooked wings and then saucing prior to plating/boxing. What supplier are you using and which brand is making the jumbo party wings? Are the pre-cooked or fresh? If I remember correctly, you used to smoke your wings but have since gone away from that with the volume you’re pushing now, so are you frying them now and then refrigerating them until ordered then popping them on the grill to re-heat? How do you package them for delivery too btw? Sorry for so many questions, but I’ve always liked your posts about wings and would love to hear how you’re doing it with the volume you have. Thanks in advance for any info you can provide!

This is my wing workflow for now and forever.

Per 40lb case of fresh wings( jumbo party)

In a bus bin, I dump the wings and add
3 scoops of soy sauce(8oz ladle) 3 scoops oyster sauce, small souffle cup of salt, garlic, and ginger. Mix well ( its best if you can let them sit for a day before precooking them)

Spread the wings across 3 full size sheet pans and precook in my oven for about 18-20 mins.

I cold hold until ordered.
When ordered I fry them for 4 mins, add the requested sauce (if ordered) toss them a few times in the mixing bowl, then box them up

Im in NH, the best supplier for fresh wings here is a company called Mountaire, out of Delaware. You being on the west coast you prob haVe different chicken producers. I wouldn’t worry about the brand youre just looking for fresh jumbo party wings, all suppliers should carry them, Id just go with whomever gives you the best kill dates
