What's everyone paying for wings?

I have a deck oven, its at the highest setting, its really old so I doubt its at what the dial says, I just make sure theyre are cooked through. We fry them to crisp them up and give nice color, when it comes to wings my customers like them well done.

You can cold hold for a few days at least. Mine dont last more than a couple days.
You can freeze them after youve precooked them and slack out what you need the day before. I used this method before wings became popular

I going to try that. I buy the tyson precooked wings and people love them,
including me. I have tried many times to make my own wings but they taste like shit. I found many recipes on the internet and youtube, and they all say you have to use baking powder. I think that may be where I am going wrong.

It sure would improve my food cost if I could prep my own.

Not sure about the oyster sauce though. I will give it a shot.

This is my wing workflow for now and forever.

Per 40lb case of fresh wings( jumbo party)

In a bus bin, I dump the wings and add
3 scoops of soy sauce(8oz ladle) 3 scoops oyster sauce, small souffle cup of salt, garlic, and ginger. Mix well ( its best if you can let them sit for a day before precooking them)

Spread the wings across 3 full size sheet pans and precook in my oven for about 18-20 mins.

I cold hold until ordered.
When ordered I fry them for 4 mins, add the requested sauce (if ordered) toss them a few times in the mixing bowl, then box them up

Im in NH, the best supplier for fresh wings here is a company called Mountaire, out of Delaware. You being on the west coast you prob haVe different chicken producers. I wouldn’t worry about the brand youre just looking for fresh jumbo party wings, all suppliers should carry them, Id just go with whomever gives you the best kill dates

Sorry for jumping on this older post but what are your updates prices? I do the Jumbo fresh cuts. October 2018 I was paying $60-$70 per case, by February 2019 I was paying $110-$120 per case. Food distributors claimed Super Bowl Prices. Right now I’m between $80-$90 per case in NY.

Also, I precook them for 10-15 minutes in oven. Sort and bag them by the dozen. Hold on fridge then finish in fryer for 5-10 minutes. In my opinion this makes them extra crispy. It also helps to save the fryer oil because a lot of the fat renders out in the oven rather than the fryer.

What are your current prices and cook methods?

we are in the same boat although I am not sure we ever got that high during the SB. We use fresh 6-9ct and charge $8.95 for 8pcs and serve with a 3.25oz souffle cup of Kens Chuncky Blue Cheese

We prep almost the same…2 passes in the conveyor (7:30min each - flip each pass). Cool and hold until ordered. Fry for 5min at 350 and toss in sauce. We usually prep a 40lb case a day

We buy 7-9 wings fresh $84.
I hate when we have to buy jumbo wings, the medium size wings are the best.
We marinate them, cook in the deck oven 15 mins then cold hold, fry them when ordered for 5 mins
