Smiling with Hope Pizzeria begins

We arrived Monday in Reno, NV, and have been busy getting our pizza with a social cause in order. We hope for an early Dec. opening . Things are moving smooth and fast. Our 1960’s Blodgett 1000 ovens, which I drove out with our home furnishing to save $, were put in yesterday and the painters began and should be done today. I am on the lookout for a 60qt mixer and have ordered a walk in fridge and dough proofer. there is a wonderful local restaurant supply here. Now it is just turn the ovens on and hope the altitude doesn’t mess with the gas/air mixture. We shall see. Here is my root of inspiration with pizza and food- my mother and grandmother who came from Italy and acted like they never left.

thanks guys! This will be an old school pizzeria like I grew up learning/eating in. No fancy stuff. Just clean and happy. the painters finished today and just a few touch up spots to do tomorrow. Here is the new color. We are getting the floors cleaned and waxed once all the equipment is in. The table clothes will be traditional red/white checkered .Walter

Your store looks great! Be sure to have your air/gas mixture checked when the oven is hooked up. It’s an easy fix if it needs to be adjusted.

Tom: Thanks! Your sharing of information and support has been very special to me. I have the original manual for the oven and showed it to the plumber Friday. He said we have plenty of gas and will adjust the mixture if need be. I have been working out everyday at my normal rate/time on the elliptical and don’t feel any strain. I am hoping the ovens will do the same when the plumber hooks them up tomorrow.

I am not having any luck with finding a 60qt mixer in Reno. One of the local restaurant supply companies has a huge inventory of new stuff on site and can get us a Thunderbird 60qt.

We used a Thunderbird 20qt in my classroom and it worked flawlessy for the past 6 years and we overloaded it daily with our whole wheat dog biscuit dough. The 60qt has 4hp motor and I am thinking of buying one new. Any thoughts? Thanks. Walter

Tom: The ovens got hooked up today and they needed no adjustment on the air/gas mixture. Just nice blue peaks :slight_smile: Walter

We have had a lot of activity this week with getting our licenses in line, the floors stripped waxed, a walk in installed, an 80 qt mixer ordered, vendors set up, and final updates to the structure done. We just need to re paint the kitchen floor, get some tables/chairs and hope to be open in 2-3 weeks. Walter

Be sure to check with your health department/codes department to see if they have a recommendation as to what kind of paint they would like to see you use. Work with them now and they won’t bug you later…you always want to stay on their good side.

Thanks Tom. The general contractor we used brought in a BOH inspector to look over the work and he said all we needed to do was touch up the paint where raw concrete was visible with a similar epoxy paint that is there now. They told me what to get. We have passed the fire and environmental inspections and just need the BOH to open. Walter

Here are some updated photos from today. We got the new 80qt thunderbird mixer delivered today and man it was a hairy go getting it on and off the liftgate. Luckily it made it in the shop safely and the moving crew set it in place perfectly. Thanks Tom for the support on getting the Thunderbird. They threw in a bowl dolly for the cause which was very nice of them considering we got it at a great price. I have been hand kneading dough and have things figured out with my recipe and the altitude and low humidity of Reno (NY cheese and Sicilian Ricotta). We get our BOH inspection next Thursday and interview a young woman with Developmental Disabilities this week. It is getting exciting! Walter
